Instructions

Step 1: Prepare the Shrimp

Start by boiling a pot of water. Add the shrimp once the water starts to boil and cook for about 2-3 minutes or until they turn pink and opaque. Drain and place the shrimp in a bowl of ice water to stop the cooking process. Once cooled, slice the shrimp in half lengthwise.

In a small bowl, whisk together fish sauce, lime juice, sugar, minced garlic, and chopped chili (if using) until the sugar is dissolved and the dressing is well mixed. Adjust the seasoning to taste—a little more fish sauce for saltiness or extra lime juice for acidity.

In a large mixing bowl, combine the shrimp, rice vermicelli noodles, lettuce, carrots, cabbage, mint, and cilantro. Pour the dressing over the salad and toss gently to ensure everything is evenly coated.
