Step 1: Preparing the Fish

Begin by cleaning the fish thoroughly. Rinse it under cold water and remove any scales and internal organs if needed. Pat the fish dry with paper towels. Make shallow diagonal cuts on both sides of the fish to allow the marinade to penetrate better.

Step 2: Marinating

In a bowl, combine fish sauce, soy sauce, sugar, minced garlic, and minced ginger. Mix well to create the marinade. Rub this mixture all over the fish, ensuring it gets into the cuts you made earlier. Add salt and pepper to taste. For added flavor, place a few slices of lemon or lime inside the fish. Allow it to marinate for at least 30 minutes, or longer if you have time, in the refrigerator.

Step 3: Preparing for Steaming

While the fish is marinating, set up your steamer. You can use a traditional bamboo steamer or a metal steamer basket. Fill a pot with water, making sure that the water level is below the steamer basket. Bring the water to a gentle boil.

Step 4: Steaming the Fish

Once the fish has marinated, place it on a heatproof plate. Lay fresh herbs on top and around the fish for added flavor. Carefully place the plate in the steamer basket, cover it with a lid, and steam for about 15-20 minutes. The cooking time may vary depending on the size of the fish; it’s ready when the flesh is opaque and flakes easily with a fork.

Once cooked, remove the fish from the steamer and garnish with additional fresh herbs and lime wedges. Vietnamese steamed fish is best served hot with a side of rice and dipping sauce, such as a simple mixture of lime juice and chili for an extra kick.
