Instructions

Step 1: Prepare the Rice Paper Wrappers

Fill a shallow bowl with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds, or until it becomes pliable but not too soft. Carefully remove it and lay it flat on a clean work surface.

Step 2: Add the Fillings

In the center of the rice paper, arrange a small amount of vermicelli noodles, followed by a handful of lettuce, a few sticks of carrot, cucumber, and red bell pepper. Place a slice of avocado and a few leaves of fresh herbs on top of the vegetables.

Step 3: Roll the Spring Rolls

To roll the spring rolls, start by folding the bottom edge of the rice paper over the filling. Then, fold in the sides, making sure the filling is secure. Continue rolling tightly until you reach the top edge of the wrapper. Repeat this process with the remaining ingredients.

Step 4: Serve with Dipping Sauce

Arrange the rolled spring rolls on a serving platter. Serve with soy sauce or hoisin sauce for dipping. For an extra kick, you can also prepare a spicy peanut sauce or a chili garlic sauce on the side.
