A Step-by-Step Guide to Making Vietnamese Appetizers

1. Vietnamese Spring Rolls

Vietnamese spring rolls, or Gỏi cuốn, are a refreshing and healthy appetizer that's perfect for any occasion. They are made with fresh vegetables, herbs, and usually shrimp or pork, all wrapped in rice paper.

Ingredients:

  • 8-10 rice paper wrappers
  • 200g cooked shrimp, sliced in half
  • 1 cup vermicelli noodles, cooked and cooled
  • 1 cup lettuce leaves, washed and dried
  • 1/2 cup mint leaves
  • 1/2 cup cilantro leaves
  • 1 medium carrot, julienned
  • Sauce for dipping (peanut sauce or hoisin sauce)

Instructions:

  1. Prepare all your ingredients and lay them out in an assembly line.
  2. Fill a shallow bowl with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it becomes pliable.
  3. Place the softened wrapper on a clean, flat surface.
  4. Start layering your ingredients: place a lettuce leaf, a small amount of vermicelli noodles, a few slices of shrimp, some carrot, mint, and cilantro on the lower third of the rice paper.
  5. Fold the sides of the wrapper over the filling, then roll it up tightly from the bottom to the top, like a burrito.
  6. Repeat the process until all ingredients are used.
  7. Serve with your choice of dipping sauce.

2. Banh Xeo (Vietnamese Pancakes)

Banh Xeo, also known as Vietnamese pancakes, are crispy, savory pancakes filled with a delightfully aromatic mixture of pork, shrimp, and bean sprouts.

Ingredients:

  • 1 cup rice flour
  • 1 cup coconut milk
  • 1/2 cup water
  • 1/2 tsp turmeric powder
  • 1/2 tsp salt
  • 200g pork, thinly sliced
  • 100g shrimp, peeled and deveined
  • 1 cup bean sprouts
  • 2 green onions, chopped
  • Vegetable oil for frying

Instructions:

  1. In a bowl, mix the rice flour, coconut milk, water, turmeric powder, and salt until smooth. Let the batter rest for 30 minutes.
  2. In a skillet, heat about 2 tablespoons of vegetable oil over medium heat. Add the pork and shrimp, and sauté until cooked through.
  3. Add the bean sprouts and green onions to the skillet and stir-fry for another minute.
  4. Pour a ladleful of the batter into the skillet, quickly swirling it to cover the bottom evenly, and cook for 2-3 minutes until the edges are crispy.
  5. Place a portion of the pork and shrimp mixture in the center, fold the pancake in half, and continue to cook until crispy.
  6. Repeat with the remaining batter and filling.
  7. Serve with fresh herbs and a dipping sauce of your choice, such as nuoc cham.
