How to Make Traditional Vietnamese Sweet Tofu Puddings

Vietnamese sweet tofu puddings, also known as "tàu hủ nước đường," are a delicious dessert that combines silky smooth tofu with a sweet syrup. This traditional delicacy is popular in Vietnamese cuisine, and making it at home can be both satisfying and fun. Ingredients Needed

To create an authentic Vietnamese sweet tofu pudding, you will need the following ingredients:

  • 1 cup of dried soybeans
  • 4 cups of water (for blending)
  • 1/4 tsp of salt
  • 1/2 cup of sugar (for the syrup)
  • 1 cup of water (for the syrup)
  • 1 pandan leaf (optional, for fragrance)

Step-by-Step Instructions

Step 1: Make Soy Milk

Start by soaking 1 cup of dried soybeans in water overnight. This will soften the beans and make them easier to blend.

After soaking, drain the beans and place them in a blender with 4 cups of fresh water. Blend the mixture until smooth.

Step 2: Strain the Soy Milk

Next, you'll need to strain the blended soy mixture through a cheesecloth or fine strainer into a large pot. Squeeze out as much liquid as possible to extract all the soy milk. The leftover soybean pulp can be saved for use in other recipes.

Step 3: Heat the Soy Milk

Heat the strained soy milk over medium heat until it reaches a gentle boil. Stir frequently to prevent it from burning on the bottom. Once boiling, reduce the heat to low and simmer for about 5 minutes while stirring.

Step 4: Add Salt and Coagulate the Milk

After simmering, add 1/4 teaspoon of salt to the soy milk for flavor. Now, it’s time to create the tofu. Dissolve 1 teaspoon of magnesium chloride (nigari) in a small amount of warm water and slowly stir it into the hot soy milk. Stir gently for a few seconds until you see curds forming.

Remove the pot from the heat and cover it with a lid. Let it sit for about 15 minutes to allow the curds to fully form and settle.

Step 5: Press the Tofu

Line a tofu mold or small container with cheesecloth. Carefully ladle the curdled soy mixture into the mold, covering it with the cheesecloth. Place a weight on top to help the tofu firm up. Let it drain for about 20-30 minutes.

Step 6: Prepare the Sweet Syrup

While the tofu is being pressed, you can prepare the sweet syrup. In a small pot, combine 1/2 cup of sugar with 1 cup of water and the pandan leaf (if using). Bring it to a boil, stirring until the sugar dissolves. Once boiling, reduce the heat and let it simmer for another 5-10 minutes. Remove from heat and discard the pandan leaf.

Step 7: Serve the Tofu Puddings

Once the tofu is set and firm, remove it from the mold and cut it into desired pieces. Serve the pieces of tofu with the sweet syrup drizzled over the top. Feel free to add toppings such as crushed ice, grated coconut, or mung beans for added texture.
