Vietnamese stir-fried noodles, often referred to as "Phở xào," are a delicious and versatile dish that can be prepared quickly, making them perfect for a simple dinner. Ingredients

  • 8 oz flat rice noodles (bánh phở)
  • 2 tablespoons vegetable oil

  • 1 cup carrots, julienned
  • 1 cup broccoli florets
  • 1 cup bean sprouts
  • 1 cup protein of your choice (shrimp, chicken, or tofu)
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sugar
  • Fresh cilantro for garnish
  • Sliced green onions for garnish

Instructions

Step 1: Prepare the Noodles

Start by cooking the flat rice noodles according to the package instructions. Typically, you will need to soak them in hot water for about 20-30 minutes until they are soft. Drain the noodles and set them aside.

Step 2: Stir-Fry the Protein

In a large wok or frying pan, heat 1 tablespoon of vegetable oil over medium-high heat. Add your choice of protein (shrimp, chicken, or tofu) and stir-fry until cooked through. Remove from the pan and set aside.

Step 3: Sauté the Vegetables

In the same pan, add the remaining tablespoon of oil. Toss in the minced garlic and sliced onions, cooking until fragrant. Next, add the bell peppers, carrots, and broccoli. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.

Step 4: Combine Ingredients

Return the cooked protein to the pan, then add the drained noodles, soy sauce, oyster sauce (if using), and sugar. Gently toss everything together with tongs or a spatula, ensuring the noodles are well coated in the sauces. Continue to stir-fry for an additional 2-3 minutes to heat everything through.

Step 5: Add Bean Sprouts and Garnish

Finally, fold in the bean sprouts and stir-fry for another minute. This will retain their crunchiness. Once done, remove from heat and transfer the stir-fried noodles to a serving dish.

Garnish with fresh cilantro and sliced green onions for an extra burst of flavor.
