Instructions:

1. In a large pot, heat some oil over medium heat. Add the onions, garlic, and ginger, and sauté until fragrant. 2. Add the cinnamon sticks, star anise, coriander seeds, and fennel seeds, and continue to cook for another minute. 3. Pour in the vegetable broth, soy sauce, and hoisin sauce. Bring the broth to a simmer and let it cook for about 15-20 minutes to allow the flavors to develop. 4. While the broth is simmering, prepare the rice noodles according to the package instructions. 5. Once the broth is ready, strain it to remove the spices and aromatics, leaving a clear broth. 6. To assemble the Pho bowls, divide the cooked noodles among serving bowls. Top them with sliced mushrooms, bean sprouts, carrots, and bell peppers. 7. Ladle the hot broth over the noodles and vegetables, making sure to cover everything in the bowl. 8. Garnish with fresh herbs and serve with lime wedges on the side for squeezing over the soup.
