Simple Pho Ga Recipe

Ingredients:

- 8 cups of chicken broth - 1 pound boneless, skinless chicken breasts - 1 onion, peeled and halved - 3-inch piece of ginger, peeled and sliced - 2 cloves of garlic, minced - 1 cinnamon stick - 3 star anise - 3 cloves - 1 tablespoon fish sauce - 1 tablespoon soy sauce - 8 oz rice noodles - Toppings: fresh herbs (cilantro, Thai basil, mint), bean sprouts, lime wedges, sliced chili peppers

Instructions:

1. In a large pot, combine the chicken broth, onion, ginger, garlic, cinnamon stick, star anise, and cloves. Bring to a simmer over medium heat.

2. Add the chicken breasts to the pot and poach for about 15-20 minutes, or until cooked through. Remove the chicken and set aside to cool slightly before shredding or slicing.

3. While the chicken is cooking, prepare the rice noodles according to package instructions. Drain and set aside.

4. Once the chicken is removed from the broth, season the broth with fish sauce and soy sauce to taste. Discard the onion, ginger, and whole spices.

5. To assemble the Pho Ga bowls, divide the cooked rice noodles among serving bowls. Top with the shredded or sliced chicken.

6. Ladle the hot broth over the noodles and chicken. The hot broth will warm the chicken and noodles.

7. Serve the Pho Ga hot, accompanied by a plate of fresh herbs, bean sprouts, lime wedges, and sliced chili peppers for garnishing. Diners can customize their bowls with as much or as little of each topping as they like.
