Vietnamese vegetable soup with tofu, also known as "Canh Rau," is a flavorful and nutritious dish that is both comforting and easy to prepare.   • 1 block of firm tofu (14 oz), cut into cubes
  • 4 cups vegetable broth or water

  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon vegetable oil
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Fresh herbs (like cilantro or basil) for garnish

Instructions

Step 1: Prepare the Tofu

Begin by pressing the tofu to remove excess moisture. Wrap the tofu block in a clean kitchen towel and place something heavy on top for about 15 minutes. Once pressed, cut the tofu into bite-sized cubes.

Step 2: Sauté Aromatics

In a large pot, heat the vegetable oil over medium heat. Add the sliced onion and sauté until translucent. Next, add the minced garlic and grated ginger, cooking for an additional minute until fragrant.

Step 3: Add Vegetables

Add your mixed vegetables to the pot and stir them for a couple of minutes. This will help to soften them slightly and release their flavors.

Step 4: Add Broth

Pour in the vegetable broth or water and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for about 10 minutes, allowing the vegetables to cook through.

Step 5: Incorporate Tofu and Season

Gently add the cubed tofu to the pot. Season with soy sauce, salt, and pepper to taste. Let it simmer for another 5 minutes to allow all the flavors to combine.

Step 6: Serve

Remove from heat and ladle the soup into bowls. Garnish with fresh herbs like cilantro or basil for an added burst of flavor.
