How to Make Vietnamese Cauliflower Soup

Instructions

Step 1: Sauté Aromatics
In a large pot, heat a tablespoon of oil over medium heat. Add the diced onion and cook until it becomes translucent. Stir in the minced garlic and grated ginger, cooking until they are fragrant, about 1-2 minutes.

Step 2: Add Cauliflower
Add the chopped cauliflower florets to the pot. Sauté for another 5 minutes, allowing the cauliflower to soften slightly and absorb the flavors.

Step 3: Combine Liquids
Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low and add the turmeric powder, fish sauce, and coconut milk. Stir well to combine.

Step 4: Simmer the Soup
Cover the pot and let the soup simmer for about 20 minutes, or until the cauliflower is tender and cooked through.

Step 5: Blend the Soup
Using an immersion blender, carefully blend the soup until it reaches a smooth, creamy consistency. If you don’t have an immersion blender, you can transfer the soup to a regular blender in batches, but be sure to let it cool slightly before blending.

Step 6: Season and Serve
Taste the soup and adjust the seasoning with salt and pepper as needed. Serve hot, garnished with fresh cilantro or Thai basil for an added burst of flavor.
