Ingredients

To prepare Vietnamese Lotus Root Salad, you will need:

Instructions

Step 1: Prepare the Lotus Root
Start by cleaning the lotus root thoroughly. Slice the lotus root into thin rounds, about 0.5 cm thick. Place the slices in a bowl of cold water with a splash of vinegar to prevent browning. Let them soak for about 10-15 minutes.

Step 2: Cook the Shrimp and Pork
Bring a pot of water to a boil. Add the shrimp and pork (if using) to the boiling water. Cook until the shrimp turn pink and opaque and the pork is fully cooked. This usually takes about 3-5 minutes. Drain and let them cool before slicing the pork into thin strips.

Step 3: Blanch the Lotus Root
In the same pot, bring water to a boil again and add the lotus root slices. Blanch for about 3-4 minutes until they are slightly tender but still crunchy. Drain and rinse under cold water to stop the cooking process.

Step 4: Combine Salad Ingredients
In a large mixing bowl, combine the blanched lotus root, shrimp, pork, carrot, cucumber, and a handful of fresh herbs. Toss everything together gently to mix.

Step 5: Prepare the Dressing
In a separate bowl, whisk together the fish sauce, sugar, lime juice, and sliced chili until the sugar is dissolved. Taste and adjust the seasoning if necessary, balancing the flavors of salty, sweet, and sour.

Step 6: Dress the Salad
Pour the dressing over the salad mixture and toss well to ensure everything is coated evenly. Allow the salad to sit for about 10 minutes to let the flavors meld.

Step 7: Serve
