  • 500g beef brisket or flank

  • 1 tablespoon sugar
  • 200g rice noodles (bánh phở)

Step-by-Step Preparation

Step 1: Make the Broth

Start by placing the beef bones in a large pot and fill it with enough water to cover them. Bring the water to a boil, then let it simmer for about 15 minutes. This helps to remove impurities. Discard the water and rinse the bones.

In the same pot, add the cleaned bones, brisket, halved onion, ginger slices, coriander seeds, star anise, and cinnamon stick. Cover these ingredients with fresh water (about 3 liters) and bring to a boil over high heat. Reduce the heat to low and let it simmer for at least 4 hours, skimming off any foam or fat that rises to the surface.

Step 2: Season the Broth

After simmering, remove the brisket and set it aside. Strain the broth through a fine sieve or cheesecloth to remove solid ingredients. Return the clear broth to the pot, and add fish sauce and sugar to taste. Keep it warm on low heat.

Step 3: Prepare the Noodles

Cook the rice noodles according to the package instructions. Drain and rinse them under cold water to stop the cooking process. Set them aside.

Step 4: Slice the Beef

Once the brisket has cooled, slice it thinly against the grain. This will make it tender and easy to eat. If you prefer, you can also lightly sear the slices in a pan for added flavor.

Assemble Your Pho

In a large bowl, add a serving of the cooked rice noodles. Top with slices of the seared brisket, if using, and pour the hot broth over the noodles until they are fully submerged.

Garnish your pho with fresh herbs, bean sprouts, and sliced chili peppers for an extra kick. Serve with lime wedges on the side to add a zesty brightness to your dish.
