1. Che Ba Mau (Three-Color Dessert)

Che Ba Mau, also known as the three-color dessert, is a vibrant and visually appealing treat. This dessert features layers of mung beans, red beans, and pandan jelly, topped with coconut milk.

Ingredients:

  • 1 cup mung beans
  • 1 cup red beans (cooked)
  • 1/2 cup tapioca pearls
  • 1 cup pandan leaves (for color and flavor)
  • Coconut milk
  • Sugar to taste
  • Ice (optional)

Instructions:

  1. Soak the mung beans overnight, then steam them until soft.
  2. In a pot, boil water and add the tapioca pearls. Cook until they turn transparent.
  3. Blend the cooked mung beans with a bit of sugar for sweetness and smooth texture.
  4. Create pandan jelly by boiling water with pandan leaves, adding sugar, and mixing with gelatin.
  5. Assemble the dessert in a glass: layer mung beans, red beans, and tapioca pearls. Pour coconut milk on top and add ice if desired.

2. Bánh Chuối (Vietnamese Banana Cake)

Bánh Chuối is a steamed banana cake that epitomizes the sweetness of ripe bananas, melding harmoniously with coconut milk.

Ingredients:

  • 4 ripe bananas
  • 1 cup rice flour
  • 1 cup coconut milk
  • 1/2 cup sugar
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • Chopped nuts for topping (optional)

Instructions:

  1. In a bowl, mix rice flour, sugar, salt, and vanilla extract.
  2. Add coconut milk to the dry mixture, stirring until well combined.
  3. Slice the bananas and arrange them in a steaming tray or dish. Pour the batter over the bananas.
  4. Steam the mixture for about 30-40 minutes, or until the cake is set.
  5. Let it cool, then slice and top with chopped nuts if desired.

3. Bánh Flan (Vietnamese Caramel Custard)

Bánh Flan is a popular Vietnamese version of the classic caramel custard dessert, known for its creamy texture and rich flavor.

Ingredients:

  • 1 can of condensed milk
  • 2 cups of milk (whole or coconut)
  • 4 eggs
  • 1 cup sugar (for caramel)
  • 1 tsp vanilla extract

Instructions:

  1. In a saucepan, melt the sugar over medium heat to create caramel. Once it turns golden brown, quickly pour it into individual ramekins.
  2. In a bowl, whisk together eggs, condensed milk, milk, and vanilla until well combined.
  3. Pour the egg mixture into the ramekins over the caramel.
  4. Place the ramekins in a larger baking dish, fill the dish with water, and bake in a preheated oven at 350°F (175°C) for about 45 minutes.
  5. Allow to cool, then refrigerate before serving. Invert onto a plate to reveal the caramel topping.

4. Xoi Xoai (Mango Sticky Rice)

Xoi Xoai is a fragrant dessert that combines sticky rice with fresh mango and coconut cream, creating a harmony of taste and texture.

  • 2 ripe mangoes
