  • 200g rice flour
  • 100g tapioca flour
  • 200g sugar
  • 400ml coconut milk
  • 300ml pandan juice (freshly extracted from pandan leaves)
  • 1 teaspoon baking powder
  • Pinch of salt
  • Food coloring (optional)

Instructions

Step 1: Prepare the Pandan Juice

To extract pandan juice, blend a handful of fresh pandan leaves with a little water until smooth. Strain the mixture through a fine sieve or cheesecloth to obtain the juice. You’ll need about 300ml of pandan juice for the cake.

Step 2: Mix the Cake Batters

In a mixing bowl, combine the rice flour, tapioca flour, sugar, baking powder, and salt. Gradually add the coconut milk and pandan juice to the mixture. Whisk until you have a smooth batter.

Next, divide the batter into two bowls. Leave one bowl untouched and add a few drops of food coloring to the second bowl, creating a vibrant green hue.

Step 3: Prepare the Steaming Setup

Prepare your steaming setup by filling a pot with water and bringing it to a boil. Cut small square pieces of parchment paper to line the bottom of your cake mold or tray.

Step 4: Layer the Batters

Pour a layer of the uncolored batter into the mold, about 1/2 inch thick. Steam for about 10 minutes until it sets. Once set, pour an equal layer of the green batter over the first layer. Again, steam for another 10 minutes.

Repeat this process, alternating between the uncolored and green batter until all the batter has been used. Ensure each layer is steamed until set before adding the next.

Step 5: Cool and Serve

Once all the layers are complete, remove the mold from the steamer and let it cool at room temperature. Once cooled, carefully remove the cake from the mold and cut it into small squares or slices.

Vietnamese Pandan Layer Cakes can be served warm or chilled. For an extra touch, you can drizzle some coconut cream over the top before serving.
