Step 2: Cooking the Beans

Drain the soaked beans and place the mung beans in a pot with 2 cups of water. Bring to a boil, then lower the heat and simmer until soft, about 20 minutes. For the red beans, do the same in another pot, boiling them in 2 cups of water until they are tender, which may take about 30-40 minutes.

Step 3: Combining Ingredients

Once the beans are cooked, add the mung beans to the pot with the red beans (if using). If you’re adding taro or sweet potatoes, add them now as well. Pour in an additional cup of water and simmer for about 10 minutes to allow the flavors to meld.
