How to Make Vietnamese Sweet Rice Pudding

Vietnamese sweet rice pudding, known as "chè," is a delightful treat featuring soft, glutinous rice, coconut milk, and various toppings. This dessert not only pleases the palate but also offers a glimpse into the rich culinary culture of Vietnam. Here's how to make this delicious dish at home.

Ingredients

  • 1 cup glutinous rice
  • 2 cups water
  • 1 can (400ml) coconut milk
  • 1/2 cup sugar (adjust to taste)
  • 1/4 teaspoon salt
  • 1/2 cup mung beans (optional)
  • Sesame seeds or crushed peanuts for topping (optional)

Preparation Steps

1. Prepare the Glutinous Rice

Start by rinsing 1 cup of glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 6 hours or overnight. This soaking process softens the grains, ensuring a creamy pudding.

2. Cook the Mung Beans (if using)

If you choose to include mung beans, rinse them under cold water and cook them in a pot with 1 cup of water until they are soft, about 30 minutes. You can also soak these overnight to reduce cooking time. Once cooked, set them aside.

3. Steam the Glutinous Rice

After soaking, drain the rice and place it in a steamer basket lined with cheesecloth or a clean kitchen towel. Steam the rice over boiling water for about 20-25 minutes until it’s tender and fully cooked. Make sure to check occasionally to avoid overcooking.

4. Make the Coconut Sauce

While the rice is steaming, prepare the coconut sauce. In a separate saucepan, combine 1 can of coconut milk, 1/2 cup of sugar, and 1/4 teaspoon of salt. Heat the mixture over low to medium heat, stirring gently until the sugar dissolves completely. Do not let it boil; you want it warm and combined.

5. Combine and Serve

Once the rice is done steaming, transfer it to a large bowl. Pour half of the coconut sauce over the rice and gently mix until evenly coated. If you cooked mung beans, you can fold them into the mixture at this point.

To serve, place a generous scoop of the sweet rice pudding in a bowl or dessert glass. Drizzle the remaining coconut sauce on top, and for added flavor, sprinkle sesame seeds or crushed peanuts if desired. This dessert can be enjoyed warm or chilled, depending on your preference.

Tips for the Best Vietnamese Sweet Rice Pudding

  • Experiment with toppings: You can add a variety of fruits, such as mango or jackfruit, to enhance the flavor.
  • Adjust sweetness: Feel free to modify the amount of sugar based on your taste.
  • Use pandan leaves: Adding a few pandan leaves while cooking the coconut milk can infuse a delightful aroma.

Now you know how to make Vietnamese sweet rice pudding! This simple yet delicious dessert is perfect for any occasion and is sure to impress your family and friends.
