Delicious Vietnamese Dinners You Can Prepare in 30 Minutes

1. Pho Bo (Vietnamese Beef Noodle Soup)

Ingredients:

  • 200g beef sirloin, thinly sliced
  • 200g rice noodles
  • 1 onion, sliced
  • 3 cups beef broth
  • Fresh herbs (basil, cilantro)
  • Bean sprouts
  • Lime wedges
  • Chili peppers (optional)

Instructions:

  1. In a pot, heat the beef broth and add the sliced onion. Bring to a simmer.
  2. Cook the rice noodles according to package instructions and divide them into bowls.
  3. Once the broth is simmering, add the beef slices. Cook until they are just done, around 30 seconds.
  4. Pour the broth and beef over the noodles and top with fresh herbs, bean sprouts, lime wedges, and chili peppers if desired.

2. Banh Mi (Vietnamese Sandwich)

Ingredients:

  • 1 baguette
  • 100g grilled pork or chicken, sliced
  • Carrot and daikon pickles
  • Fresh cucumber slices
  • Fresh cilantro
  • Mayonnaise
  • Sriracha sauce (optional)

Instructions:

  1. Cut the baguette in half lengthwise, and spread mayonnaise on both sides.
  2. Add the grilled pork or chicken slices.
  3. Layer with pickles, cucumber slices, and fresh cilantro.
  4. Drizzle with Sriracha sauce if you like some heat, and close the sandwich.
  5. Enjoy your Banh Mi fresh!

3. Ga Xao Sa (Lemongrass Chicken)

Ingredients:

  • 300g chicken breast, thinly sliced
  • 2 tablespoons lemongrass, minced
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon vegetable oil
  • Fresh chili and lime juice for garnish

Instructions:

  1. In a large skillet, heat the vegetable oil over medium-high heat.
  2. Add the minced lemongrass and garlic, sauté for a minute until fragrant.
  3. Add the chicken slices, soy sauce, and fish sauce. Stir-fry for about 5-7 minutes until the chicken is fully cooked.
  4. Serve garnished with fresh chili and squeeze of lime juice over rice or noodles.

4. Mi Xao (Stir-Fried Noodles)

Ingredients:

  • 200g egg noodles or rice noodles
  • 100g shrimp or chicken, sliced
  • 1 cup mixed vegetables (bell peppers, carrots, broccoli)
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon vegetable oil

Instructions:

  1. Cook the noodles according to the package instructions and set aside.
  2. In a wok, heat vegetable oil over high heat and add the shrimp or chicken. Stir-fry until cooked.
  3. Add the mixed vegetables and stir-fry for another 2-3 minutes.
  4. Add the cooked noodles, soy sauce, and oyster sauce. Toss everything together for about 2 minutes.
  5. Serve hot, garnished with green onions if desired.

5. Goi Cuon (Fresh Spring Rolls)

Ingredients:

  • Rice paper wrappers
  • 100g shrimp, cooked and sliced
  • Rice vermicelli noodles
  • Mint leaves
  • Cilantro
  • Leafy greens (lettuce, spinach)
  • Peanut dipping sauce or hoisin sauce

Instructions:

  1. Soak rice paper wrappers in warm water for a few seconds until soft.
