How to Make Vietnamese Lobster Soup

Vietnamese Lobster Soup, known as "Canh Ngêu," is a luxurious dish that captures the essence of coastal flavors and aromatic herbs. This delightful soup combines the sweetness of lobster with savory broth, making it a perfect choice for special occasions. Follow this simple recipe to create this mouthwatering dish in your own kitchen.

Ingredients

  • 2 lobsters (about 1-2 pounds each)
  • 8 cups of water or seafood stock
  • 2 tablespoons of vegetable oil
  • 1 onion, chopped
  • 4 cloves of garlic, minced
  • 1 tablespoon of ginger, grated
  • 2 tomatoes, diced
  • 1-2 red chili peppers, sliced (adjust to taste)
  • 2-3 scallions, chopped
  • 1 bunch of fresh cilantro, chopped
  • 3 tablespoons of fish sauce
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

Step 1: Prepare the Lobsters

Start by bringing a large pot of salted water to a boil. Add the lobsters and cook for about 5-7 minutes, or until they turn bright red. Remove the lobsters and let them cool. Once cooled, remove the meat from the shells and chop it into bite-sized pieces. Set aside the lobster meat and reserve the shells for flavoring the broth.

Step 2: Make the Broth

In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, minced garlic, and grated ginger, sautéing until fragrant and translucent. Add the reserved lobster shells and cook for another 3-4 minutes, allowing the flavors to meld.

Step 3: Add Tomatoes and Water

Stir in the diced tomatoes and cook until softened. Then, pour in the water or seafood stock, bringing it to a simmer. Allow the broth to simmer for about 20 minutes to extract the flavors from the lobster shells. Strain out the shells and vegetable bits, returning the clear broth to the pot.

Step 4: Season the Broth

Add the fish sauce, lime juice, salt, and pepper to the broth. Taste and adjust seasoning as necessary. If you prefer a spicier soup, add the sliced chili peppers at this stage.

Step 5: Add Lobster Meat

Gently add the chopped lobster meat to the simmering broth. Cook for an additional 2-3 minutes, just until the lobster is heated through. Be careful not to overcook the lobster, as it can become tough.

Step 6: Garnish and Serve

Remove the soup from heat and stir in the chopped scallions and cilantro for a fresh finish. Serve hot in bowls, garnished with extra herbs if desired. Vietnamese Lobster Soup pairs wonderfully with steamed rice or crusty bread for dipping.

Tips for the Perfect Vietnamese Lobster Soup

  • For an extra layer of flavor, consider adding seafood seasoning or a splash of white wine to the broth.
  • Fresh herbs are key in this recipe – use high-quality cilantro and scallions for the best results.
  • Experiment with different types of seafood if lobster isn't available, such as shrimp or crab.

Enjoy this delicious Vietnamese Lobster Soup as a heartwarming dish that will impress your family and friends. With its vibrant flavors and fragrant aromas, it’s sure to become a favorite in your culinary repertoire!
