  • Hoisin sauce (optional)
  • Sriracha sauce (optional)

Instructions

1. Prepare the Broth

Begin by blanching the beef bones. In a large pot, cover the bones with cold water and bring to a boil. Once boiling, cook for about 5-10 minutes. Drain and rinse the bones under cold water to remove impurities. This step helps achieve a clearer broth.

2. Toast the Spices

In a dry skillet over medium heat, toast star anise, cinnamon, cloves, and coriander seeds for about 2-3 minutes or until fragrant. Be careful not to burn them as this can make the broth taste bitter.

3. Combine Ingredients

In a large pot, combine the blanched bones, halved onion, halved ginger, toasted spices, salt, sugar, fish sauce, and water. Bring to a rolling boil, then reduce to a simmer. Skim off any foam that forms on the surface. Simmer for at least 3-4 hours (the longer, the better), adding more water if necessary to keep the bones covered.

4. Strain the Broth

After simmering, strain the broth through a fine mesh strainer into another pot, discarding the solids. Your broth should be clear and fragrant. Taste and adjust seasoning if necessary. Allow it to simmer gently while you prepare the noodles.

5. Prepare the Noodles

Cook the rice noodles according to package instructions. Drain and rinse them under cold water to prevent sticking. Portion the noodles into bowls.

6. Assemble Your Pho

Arrange the thinly sliced raw beef over the cooked noodles in each bowl. Pour the hot broth over the noodles and beef. The heat from the broth will cook the beef to perfection.

7. Garnish and Serve

Top each bowl with fresh herbs, bean sprouts, slices of lime, green onions, and if desired, slices of jalapeños or chili peppers. Serve with hoisin and sriracha sauce on the side for added flavor.

Tips for Perfect Pho
