How to Make Vietnamese Seafood Soup (Canh)

Vietnamese seafood soup, known as Canh, is a delightful dish bursting with flavor and health benefits. This traditional soup typically features a variety of seafood such as shrimp, fish, and squid, combined with fresh herbs and vegetables. Follow this simple recipe to create your own delicious Canh at home!

Ingredients

Before starting, gather the following ingredients:

  • 200 grams of shrimp, peeled and deveined
  • 200 grams of white fish fillets (such as tilapia or cod)
  • 100 grams of squid, cleaned and sliced
  • 3 cups of fish stock or water
  • 1 medium onion, sliced
  • 2 cloves of garlic, minced
  • 1 large tomato, chopped
  • 1 cup of spinach or water spinach (rau muống)
  • 2 tablespoons of fish sauce
  • 1 teaspoon of sugar
  • Salt and pepper to taste
  • Fresh cilantro and green onions for garnish

Instructions

Step 1: Prepare the Broth

In a large pot, heat a splash of oil over medium heat. Add the sliced onion and minced garlic, sautéing until they become aromatic and translucent, about 2-3 minutes. Then, add the chopped tomato and continue to cook for another 2 minutes, allowing the flavors to meld.

Step 2: Add the Seafood

Pour in the fish stock or water, bringing it to a gentle boil. Once boiling, carefully add the shrimp, fish fillets, and sliced squid. Allow the mixture to simmer for around 5-7 minutes or until the seafood is fully cooked.

Step 3: Season the Soup

Stir in the fish sauce, sugar, and adjust the seasoning with salt and pepper to your taste. This is a crucial step; the balance of flavors will define the taste of your Canh.

Step 4: Add the Greens

Once the seafood is cooked, gently fold in the spinach or water spinach. Cook for an additional 2 minutes until the greens are wilted and tender.

Step 5: Serve the Soup

Remove the pot from heat and ladle the soup into bowls. Garnish with fresh cilantro and sliced green onions for an aromatic touch. For an added flavor punch, squeeze some lime juice over the top before serving.

Tips for a Perfect Canh

  • Use fresh seafood for the best flavor and texture.
  • Experiment with different types of seafood to find your perfect combination.
  • Feel free to add other vegetables like mushrooms or carrots for added nutrition.
  • Serve with a side of steamed rice or crusty bread to soak up the delicious broth.

Enjoy your homemade Vietnamese seafood soup, Canh! This dish is perfect for a cozy dinner or a special occasion, and it showcases the vibrant flavors of Vietnamese cuisine.
