How to Make Vietnamese Soup with Pork and Ginger

Vietnamese soup, commonly known as "canh," is a delightful dish that combines flavors and aromas to create a comforting meal. This version features tender pork and aromatic ginger, making it perfect for any occasion. Follow this easy recipe to make your own Vietnamese soup with pork and ginger.

Ingredients

  • 500g pork (shoulder or belly, cut into small pieces)
  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 2-3 inches fresh ginger, sliced thinly
  • 4 cups chicken or pork broth
  • 1-2 tablespoons fish sauce (to taste)
  • Salt and pepper (to taste)
  • 1 cup mushrooms (shiitake or enoki), sliced
  • 1 cup bok choy or spinach, roughly chopped
  • Fresh cilantro and green onions for garnish

Instructions

Step 1: Sauté the Pork

Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until translucent. Then, add the pork pieces and cook until they are browned on all sides.

Step 2: Add Ginger and Broth

Once the pork is browned, add the sliced ginger to the pot. Stir for about a minute until fragrant. Pour in the broth and bring the mixture to a boil. Lower the heat to a simmer and cook for about 20 minutes, allowing the flavors to meld.

Step 3: Season the Soup

After simmering, add the fish sauce, salt, and pepper to taste. Adjust the seasoning according to your preferences. If you enjoy more depth of flavor, consider adding additional fish sauce or salt as needed.

Step 4: Incorporate Vegetables

Add the mushrooms and bok choy (or spinach) to the pot. Continue to simmer for another 5-10 minutes until the vegetables are tender but still vibrant in color.

Step 5: Serve the Soup

Once the soup is ready, ladle it into bowls. Garnish with fresh cilantro and sliced green onions for an extra burst of flavor. Serve hot and enjoy your homemade Vietnamese soup!

Tips for Enjoying Your Vietnamese Soup

Pair the soup with steamed jasmine rice or serve it alongside fresh crusty bread for a complete meal. For added heat, consider including a few slices of fresh chili peppers or a drizzle of chili oil.

Whether you're looking to impress guests or simply want to savor a comforting meal at home, this Vietnamese soup with pork and ginger is sure to be a hit. Its delightful combination of flavors and warming spices makes it a perfect dish for any season.
