Instructions

Step 1: Prepare the Broth

Begin by rinsing the pork bones thoroughly to remove any impurities. Place them in a large pot with water and bring it to a boil. After a few minutes, discard the first batch of water and add fresh water to cover the bones. Add the chopped onion and minced garlic.

Simmer the broth for at least 2 hours on low heat to extract maximum flavor. Season with salt, pepper, and fish sauce to taste.

Step 2: Cook the Noodles

While the broth is simmering, cook the Bánh Canh noodles according to package instructions. Once cooked, drain and rinse under cold water to prevent sticking. Set aside.

Step 3: Add the Shrimp and Pork

After the broth has simmered, add the sliced pork (if using) and simmer for an additional 10 minutes. Next, add the peeled shrimp and cook until they turn pink and opaque, which will take about 3-5 minutes.

Step 4: Assemble the Soup

In serving bowls, place a portion of the cooked Bánh Canh noodles. Ladle the hot broth, shrimp, and pork over the noodles. Garnish with fresh herbs, chopped green onions, and slices of chili, if desired.
