How to Make Vietnamese Carrot and Tofu Stir-Fry

Ingredients

  • 200g firm tofu, cubed
  • 2 large carrots, julienned
  • 1 bell pepper (red or yellow), sliced
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (or vegetarian alternative)
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro or green onions for garnish

Instructions

1. Prepare the Tofu

Start by pressing the tofu to remove excess moisture. Wrap the tofu block in a clean kitchen towel or paper towels and place a heavy object on top for about 15-20 minutes. Once pressed, cut the tofu into bite-sized cubes.

2. Cook the Tofu

Heat 1 tablespoon of vegetable oil in a frying pan or wok over medium-high heat. Add the cubed tofu and cook until golden brown on all sides, which usually takes about 5-7 minutes. Remove the cooked tofu from the pan and set it aside.

3. Stir-Fry the Vegetables

In the same pan, add another tablespoon of oil if needed. Sauté the minced garlic until fragrant, which takes about 30 seconds. Add the julienned carrots and sliced bell pepper to the pan. Stir-fry the vegetables for about 3-4 minutes until they are tender but still crisp.

4. Combine Ingredients

Return the cooked tofu to the pan along with the soy sauce and oyster sauce. Stir everything well to ensure the tofu and vegetables are evenly coated with the sauces. Cook for an additional 2-3 minutes, allowing the flavors to meld together.

5. Season to Taste

Adjust the seasoning with salt and pepper according to your preference. Stir-fry for another minute to warm everything through.

6. Serve and Garnish

Transfer the stir-fry to a serving platter and garnish with fresh cilantro or sliced green onions. This dish pairs wonderfully with steamed rice or noodles.

  • Feel free to add other vegetables like broccoli, snap peas, or bell peppers to enhance the nutrition and flavor.
  • For added heat, consider including sliced chili peppers or a dash of chili sauce.
  • Make sure not to overcrowd the pan; stir-frying in batches ensures even cooking.
