How to Make Vietnamese Stir-Fried Okra and Tofu

Vietnamese stir-fried okra and tofu is a delicious and healthy vegetarian dish that showcases the simplicity and vibrancy of Vietnamese cuisine. Ingredients

  • 200g firm tofu, sliced into bite-sized cubes
  • 200g fresh okra, trimmed and sliced
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce (or vegetarian oyster sauce)
  • 1 teaspoon sugar
  • Salt and pepper, to taste
  • Chili flakes or fresh chili (optional, for heat)
  • Fresh coriander, for garnish

Instructions

Step 1: Prepare the Tofu

Start by pressing the tofu to remove excess moisture. Wrap the tofu in a clean kitchen towel and place a heavy object on top for about 15-20 minutes. Once pressed, cut the tofu into cubes.

Step 2: Sauté the Tofu

Heat 1 tablespoon of vegetable oil in a non-stick skillet or wok over medium heat. Add the cubed tofu and sauté until golden brown on all sides, about 5-7 minutes. Remove the tofu from the pan and set it aside.

Step 3: Cook the Okra

In the same pan, add another tablespoon of vegetable oil. Add the minced garlic and sauté until fragrant, about 30 seconds. Next, add the sliced okra and cook for about 4-5 minutes, just until tender but still bright green.

Step 4: Combine Ingredients

Add the sautéed tofu back into the pan with the okra. Stir in the soy sauce, oyster sauce, sugar, salt, and pepper. Mix everything together gently to ensure the tofu and okra are well-coated with the sauces. If you enjoy a bit of heat, sprinkle in some chili flakes or fresh chopped chili at this stage.

Step 5: Final Touches

Cook the mixture for an additional 2-3 minutes until everything is heated through. Taste and adjust seasoning if necessary. Remove from heat and transfer to a serving dish.
