How to Make Vietnamese Clams with Chili and Lemongrass

Vietnamese clams with chili and lemongrass is a delicious dish that encapsulates the vibrant flavors of Vietnamese cuisine. This recipe is easy to follow and perfect for a quick weeknight dinner or a special meal with friends. With its fragrant herbs and spices, it will transport your taste buds to the bustling streets of Vietnam.

Ingredients You Will Need

  • 1 kg fresh clams, cleaned
  • 2 stalks lemongrass, trimmed and finely chopped
  • 3-4 red chilies, sliced (adjust to taste)
  • 4 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

Step 1: Prepare the Clams

Start by soaking the cleaned clams in water for about 30 minutes. This helps them expel any sand or grit. After soaking, rinse them thoroughly under cold water, ensuring they are clean and free from any debris.

Step 2: Sauté Aromatics

In a large pan or wok, heat the vegetable oil over medium heat. Add the minced garlic and chopped lemongrass. Sauté for about 2-3 minutes until fragrant, being careful not to burn the garlic.

Step 3: Add Chilies and Clams

Next, add the sliced red chilies to the pan and cook for another minute. Then, toss in the cleaned clams and stir everything together to coat the clams with the aromatic mixture.

Step 4: Season and Cook

Pour in the fish sauce and sprinkle the sugar over the clams. Cover the pan and let it cook for about 5-7 minutes on medium-high heat. This will allow the clams to open up and soak in the spices. Discard any clams that do not open during cooking.

Step 5: Garnish and Serve

Once cooked, remove the pan from heat and garnish the dish with fresh cilantro. Serve hot with lime wedges on the side, allowing your guests to squeeze the lime juice over their clams for an extra burst of flavor.

Enjoy Your Vietnamese Clams!

Dig in and savor the spicy, aromatic flavors of Vietnamese clams with chili and lemongrass. This dish pairs well with steamed rice or a simple salad, making it a versatile addition to your dinner table.

Feel free to adjust the level of chili according to your spice preference, and enjoy experimenting with this delightful recipe!
