How to Make Vietnamese Prawn Pancakes

Vietnamese prawn pancakes, also known as "Bánh Xèo," are a delightful and crispy dish that has gained popularity worldwide. These savory pancakes are filled with prawns, bean sprouts, and herbs, providing a delicious fusion of flavors and textures. Here is a step-by-step guide on how to make Vietnamese prawn pancakes at home.

Ingredients

To prepare Vietnamese prawn pancakes, you will need the following ingredients:

  • For the pancake batter:
    • 1 cup rice flour
    • 1/4 cup cornstarch
    • 1/2 teaspoon turmeric powder
    • 1 1/2 cups coconut milk
    • 1 cup water
    • Salt to taste
  • For the filling:
    • 200g prawns, peeled and deveined
    • 1 cup bean sprouts
    • 2 green onions, chopped
    • Fresh herbs (such as mint, cilantro, or basil)
  • For frying:
    • Vegetable oil

Instructions

Step 1: Prepare the Batter

In a mixing bowl, combine the rice flour, cornstarch, turmeric powder, coconut milk, water, and a pinch of salt. Whisk until smooth and let the batter rest for about 30 minutes. This resting time helps develop the flavors and texture of the pancakes.

Step 2: Prepare the Filling

While the batter is resting, prepare the filling. In a pan, heat a small amount of oil over medium heat. Add the prawns and cook until they turn pink and are cooked through. Remove from the heat and set aside. Once the prawns are cool, mix them with bean sprouts and chopped green onions.

Step 3: Cook the Pancakes

In a non-stick skillet or frying pan, heat a generous amount of vegetable oil over medium-high heat. Once the oil is hot, pour a ladleful of the batter into the pan, swirling it to spread evenly across the surface. The pancake should be thin and cover the bottom of the pan.

Immediately add a portion of the prawn filling to one half of the pancake. Cook for about 2-3 minutes, or until the edges become crispy and golden. Carefully fold the pancake in half and cook for an additional minute to ensure it is heated through.

Step 4: Serve

Once cooked, transfer the pancake to a serving plate. Repeat the process with the remaining batter and filling, adding more oil to the pan as necessary. Serve the Vietnamese prawn pancakes hot, accompanied by fresh herbs and a dipping sauce made from fish sauce, lime juice, sugar, and chili.

Tips and Variations

  • For an extra crunch, you can add some sliced mushrooms or shredded carrots to the filling.
  • For a vegetarian version, replace prawns with tofu or just use vegetables like bell peppers and zucchini.
  • Adjust the seasoning in the dipping sauce to your taste—add more lime for tanginess or sugar for sweetness.

Making Vietnamese prawn pancakes at home is a rewarding culinary adventure. With this recipe, you can enjoy a taste of Vietnam right in your own kitchen. Bon appétit!
