  • 2 pieces of fish fillets (preferably catfish or tilapia)

  • 2 cloves garlic, minced
  • 1-2 red chili peppers, sliced
  • 1 tablespoon vegetable oil
  • Fresh cilantro and lime wedges for garnish

Instructions

Step 1: Prepare the Fish

Rinse the fish fillets under cold water and pat them dry with a paper towel. Season both sides of the fish with a pinch of salt and pepper. Let them sit for about 10 minutes while you prepare the tamarind sauce.

Step 2: Make the Tamarind Sauce

In a bowl, combine the tamarind paste, fish sauce, sugar, minced garlic, and sliced chili peppers. Stir well until all ingredients are mixed thoroughly. This sauce will provide the perfect balance of sweet, sour, and spicy flavors.

Step 3: Cook the Fish

Heat the vegetable oil in a skillet over medium heat. Once the oil is hot, carefully place the fish fillets in the skillet. Cook for about 4-5 minutes on each side until the fish is cooked through and has a golden-brown crust. Be gentle when flipping the fish to prevent it from breaking apart.

Step 4: Add the Sauce

Once the fish is cooked, pour the tamarind sauce over the fish in the skillet. Let it simmer for about 2-3 minutes, allowing the fish to absorb the flavors of the sauce. You can add a splash of water if you want to adjust the consistency of the sauce.

Step 5: Serve

Remove the fish from the heat and transfer it to a serving plate. Garnish with fresh cilantro and serve with lime wedges on the side. This dish pairs wonderfully with steamed jasmine rice or rice noodles to soak up the delicious tamarind sauce.
