Instructions

Step 1: Prepare the Tofu

Begin by pressing the tofu to remove excess moisture. Wrap the tofu in a clean cloth or paper towels, and place a weight on top for about 15 minutes. Once pressed, cut the tofu into cubes and set aside.

Step 2: Sauté Ingredients

In a medium pot, heat a tablespoon of vegetable oil over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant and the onion becomes translucent.

Step 3: Add Eggplant

Stir in the eggplant pieces and cook for about 5-7 minutes, allowing them to soften. The eggplant should start to turn a golden color during this time.

Step 4: Add Broth

Pour in the vegetable broth or water, followed by the soy sauce and fish sauce (if using). Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes.

Step 5: Incorporate Tofu and Greens

Carefully add the cubed tofu and chopped greens to the pot. Stir gently to combine and cook for an additional 5 minutes, allowing the flavors to meld. Taste the soup and season with salt, pepper, and chili paste as desired.

Step 6: Serve

Once everything is cooked through, remove the pot from heat. Ladle the soup into bowls and garnish with fresh herbs like cilantro and Thai basil. Serve hot over steamed rice or enjoy it on its own.

Tips for Enhancing Your Soup

To make your Vietnamese soup even more flavorful, consider adding sliced mushrooms, bamboo shoots, or other vegetables of your choice.
