Vietnamese Lotus Root Stir-Fry with Tofu is a delicious and healthy dish that showcases the unique texture and flavor of lotus root. Ingredients:

  • 200g lotus root, peeled and sliced
  • 250g firm tofu, drained and cubed
  • 1 bell pepper, thinly sliced
  • 1 carrot, julienned
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (or vegetarian alternative)
  • 2 tablespoons vegetable oil
  • Salt and pepper, to taste
  • Chopped green onions, for garnish

Instructions:

1. Prepare the Lotus Root

Start by cleaning the lotus root. Peel the outer skin using a vegetable peeler and then slice it into thin rounds. Soak the lotus root slices in water with a splash of vinegar to prevent browning while you prepare the other ingredients.

2. Cook the Tofu

In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Once hot, add the cubed tofu and fry until golden brown on all sides, approximately 5-7 minutes. Once cooked, remove the tofu from the skillet and set it aside on a plate. This step helps to add texture and flavor to the tofu.

3. Stir-Fry the Vegetables

In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and ginger, sautéing until fragrant, about 30 seconds. Then, add the bell pepper and carrot. Stir-fry these vegetables for 3-4 minutes until they are just tender but still crisp.

4. Combine and Season

Drain the soaked lotus root slices and add them to the skillet. Stir-fry for another 5-6 minutes until the lotus root is tender yet crunchy. Next, add the fried tofu back into the skillet. Pour in the soy sauce and oyster sauce, mixing everything well. Season with salt and pepper to taste. Cook for an additional 2 minutes to allow the flavors to meld.

5. Serve and Garnish

Once everything is cooked thoroughly and combined, scoop the stir-fry onto a serving platter. Garnish with chopped green onions to add a fresh touch. This dish is great served hot with steamed rice or as a side to your favorite Vietnamese meals.
