Ingredients

  • 300g fresh spinach, washed and drained
  • 200g firm tofu, cut into cubes

Instructions

1. Prepare the Tofu

Start by pressing the tofu to remove excess moisture. Wrap the tofu in a clean kitchen towel and place a heavy object on top for about 15 minutes. This will help the tofu achieve a firmer texture when cooked.

2. Cook the Tofu

Heat 1 tablespoon of vegetable oil in a non-stick skillet or wok over medium-high heat. Once the oil is hot, add the cubed tofu. Fry the tofu until it turns golden brown and crispy on all sides, approximately 5-7 minutes. Once cooked, transfer the tofu to a plate and set aside.

3. Sauté the Garlic

In the same skillet, add the remaining tablespoon of vegetable oil. When the oil is hot, add the minced garlic and sauté for about 1 minute until fragrant, taking care not to burn it.

4. Add the Spinach

Next, add the fresh spinach to the skillet. Quickly stir-fry for about 2-3 minutes or until the spinach wilts down. The vibrant green color is a good indicator that the spinach is perfectly cooked.

5. Combine Tofu and Season

Return the crispy tofu to the skillet with the spinach. Add the soy sauce and oyster sauce (if using) to the mixture. Stir well to combine and cook for an additional 1-2 minutes, allowing the flavors to meld. Season with salt, pepper, and chili flakes to taste, adjusting according to your preference.

6. Serve
