How to Make Vietnamese Water Spinach Stir-Fry

Vietnamese water spinach, known as "rau muống," is a delicious leafy green vegetable that is popular in Vietnamese cuisine. This versatile and nutritious veggie is commonly stir-fried, bringing out its natural flavors. In this article, we will guide you on how to make a simple yet flavorful Vietnamese water spinach stir-fry.

Ingredients

  • 200 grams of Vietnamese water spinach (rau muống)
  • 3 tablespoons of vegetable oil
  • 4 cloves of garlic, minced
  • 1-2 red chili peppers, sliced (adjust to taste)
  • 1 tablespoon of soy sauce
  • 1 teaspoon of oyster sauce (optional)
  • Salt and pepper to taste
  • 1 tablespoon of lemon juice (optional)

Instructions

Step 1: Prepare the Water Spinach

Rinse the Vietnamese water spinach thoroughly to remove any dirt or sand. Cut off the tough stems and keep the tender stems and leaves. It is essential to ensure that the greens are dry before stir-frying to achieve a good texture.

Step 2: Heat the Oil

In a large wok or frying pan, heat the vegetable oil over medium-high heat. Make sure the oil is hot before adding the ingredients to achieve a proper stir-fry.

Step 3: Sauté Garlic and Chili

Add the minced garlic and sliced red chili peppers to the hot oil. Stir-fry for about 30 seconds or until fragrant. Be careful not to burn the garlic, as it can turn bitter.

Step 4: Add the Water Spinach

Quickly add the prepared water spinach to the wok. Stir-fry for 2-3 minutes, making sure to toss continuously. The leaves will wilt, and the stems will soften while retaining their crunch.

Step 5: Season the Dish

Once the water spinach is cooked to your liking, add the soy sauce and oyster sauce, if using. Stir well to ensure the greens are evenly coated with the sauce. Season with salt and pepper to taste. If you prefer a tangy flavor, you can squeeze some lemon juice over the dish before serving.

Step 6: Serve and Enjoy

Remove the stir-fry from heat and transfer it to a serving plate. Vietnamese water spinach stir-fry is best served hot alongside steamed rice or as a side dish to complement grilled meats and seafood.

Tips for the Perfect Stir-Fry

  • Ensure your wok or pan is hot enough to create a good sear on the water spinach.
  • Keep the cooking time short to maintain the vibrant color and nutrient content of the greens.
  • Feel free to customize the stir-fry by adding other ingredients, such as tofu, mushrooms, or bell peppers.

By following these simple steps, you can create a delicious and healthy Vietnamese water spinach stir-fry that is packed with flavor and nutrients. Enjoy this quick and easy dish as part of a balanced meal or as a delightful vegetarian option!
