How to Make Vietnamese Soup with Seaweed and Shrimp

Vietnamese soup, often known as “Canh”, is a delicious and healthy dish enjoyed by many. This recipe will guide you through making a flavorful Vietnamese soup with seaweed and shrimp that’s perfect for any occasion.

Ingredients:

  • 200 grams of shrimp, peeled and deveined
  • 50 grams of dried seaweed (such as wakame)
  • 4 cups of chicken or vegetable broth
  • 1 medium onion, thinly sliced
  • 2 cloves of garlic, minced
  • 1 tablespoon of soy sauce
  • 1 tablespoon of fish sauce
  • Salt and pepper, to taste
  • Green onions, chopped, for garnish
  • Fresh cilantro, for garnish
  • Optional: chili peppers, sliced, for heat

Instructions:

Step 1: Prepare the Seaweed
Start by soaking the dried seaweed in warm water for about 10-15 minutes until it expands. Once rehydrated, drain and chop into smaller pieces if necessary. This will enhance its texture and flavor in the soup.

Step 2: Prepare the Broth
In a large pot, heat a small amount of oil over medium heat. Add the sliced onion and garlic, sautéing until they become fragrant and translucent. This will build a solid flavor base for your soup.

Step 3: Add the Broth and Seasoning
Pour in the chicken or vegetable broth, and bring it to a gentle boil. Stir in the soy sauce and fish sauce, adjusting the amount to suit your taste. Season the broth with salt and pepper as needed.

Step 4: Add the Shrimp and Seaweed
Once the broth is boiling, add the shrimp to the pot. Cook for about 3-5 minutes until the shrimp turns pink and opaque. Then, stir in the rehydrated seaweed, allowing it to simmer for an additional 2-3 minutes. This will infuse the soup with a wonderful umami flavor.

Step 5: Garnish and Serve
Remove the pot from heat. Serve the soup hot, garnishing each bowl with chopped green onions and fresh cilantro. For those who enjoy a little heat, add slices of chili peppers on top.
