How to Make Vietnamese Mushroom and Vegetable Stir-Fry

Vietnamese Mushroom and Vegetable Stir-Fry is a quick, healthy dish bursting with flavor and color. Packed with nutritious vegetables and aromatic mushrooms, this easy-to-make recipe is perfect for a weeknight dinner or a delicious side dish. Below is a step-by-step guide on how to create this delightful stir-fry.

Ingredients

  • 200g of assorted mushrooms (shiitake, oyster, or button mushrooms)
  • 1 cup of broccoli florets
  • 1 bell pepper (red or yellow), sliced
  • 1 medium carrot, julienned
  • 1 zucchini, sliced
  • 3 cloves of garlic, minced
  • 2 tablespoons of vegetable oil
  • 2 tablespoons of soy sauce
  • 1 tablespoon of oyster sauce (optional)
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

Step 1: Prepare the Vegetables and Mushrooms

Start by cleaning and slicing your mushrooms. If using dried mushrooms, be sure to soak them in warm water for about 20 minutes until they’re rehydrated. While the mushrooms are soaking, chop the broccoli, slice the bell pepper and zucchini, and julienne the carrot.

Step 2: Heat the Oil

In a large skillet or wok, heat the vegetable oil over medium-high heat. A well-seasoned or non-stick pan works best to prevent sticking.

Step 3: Cook the Garlic

Add the minced garlic to the hot oil, stirring frequently until fragrant, which should take about 30 seconds. Be careful not to burn it, as this will lead to a bitter taste in your stir-fry.

Step 4: Add the Vegetables

Proceed by adding the carrots and broccoli florets to the pan. Stir-fry for about 3-4 minutes, allowing the vegetables to soften slightly. Next, in go the bell pepper and zucchini; stir-fry for another 2 minutes until all the vegetables are vibrant and cooked through but still crisp.

Step 5: Incorporate the Mushrooms

If you are using fresh or soaked mushrooms, add them now. Stir everything together and let the mushrooms cook for about 3 minutes until they have reached desired tenderness.

Step 6: Season the Stir-Fry

Pour in the soy sauce and oyster sauce (if using), stirring well to coat all the vegetables. Taste and adjust the seasoning with salt and pepper as needed. Cook for an additional 1-2 minutes for the flavors to meld.

Step 7: Serve and Garnish

Once everything is heated through, remove the pan from heat. Serve your Vietnamese Mushroom and Vegetable Stir-Fry hot, garnished with fresh cilantro for an added burst of flavor. This dish pairs wonderfully with steamed rice or noodles.

Tips for the Perfect Stir-Fry

1. Prep Ahead: To save time, cut your vegetables in advance and store them in the fridge until you are ready to cook.

2. High Heat: Maintain high heat during cooking to retain the crispiness of the vegetables.

3. Variations: Feel free to add your favorite proteins such as tofu, chicken, or shrimp for a heartier meal.

This Vietnamese Mushroom and Vegetable Stir-Fry is not just easy to make, but it's also a delicious way to incorporate a variety of vegetables into your diet. Enjoy this vibrant dish any night of the week!
