How to Make Vietnamese Tomato and Tofu Stir-Fry

  • 400g firm tofu
  • 2 large ripe tomatoes
  • 1 medium onion
  • 2 cloves of garlic
  • 1 tablespoon soy sauce

  • Cooked jasmine rice for serving

Instructions

Step 1: Preparing the Tofu

Begin by draining the firm tofu. Press it between paper towels to remove excess moisture, then cut it into bite-sized cubes. This will help the tofu absorb the flavors of the stir-fry.

Step 2: Sautéing Ingredients

In a large frying pan or wok, heat the vegetable oil over medium heat. Add the tofu cubes and cook until they are golden brown on all sides, about 5-7 minutes. Once done, remove the tofu from the pan and set it aside.

Step 3: Cooking the Vegetables

In the same pan, add the sliced onion and minced garlic. Sauté for 2-3 minutes until they become fragrant and translucent. Next, chop the ripe tomatoes into wedges and add them to the pan. Stir everything together and cook for another 3-5 minutes until the tomatoes are softened.

Step 4: Combining Ingredients

Once the tomatoes are cooked down, return the sautéed tofu to the pan. Add the soy sauce, salt, and pepper. Gently toss to combine all ingredients. Cook for an additional 2 minutes to allow the flavors to meld together.

Step 5: Serving

Remove the stir-fry from heat. Serve the Tomato and Tofu Stir-Fry hot over a bed of jasmine rice. Garnish with fresh basil or cilantro for added flavor and visual appeal.
